Good Cookie Valentine's Event Cookies 4 Kids Cancer

I’m so excited to participate in this Valentine’s event! This is the Seventh year for our Helping Cookies event and our mission is to continue to make a difference in the fight against pediatric cancer.

Did you know?

Cancer is the #1 cause of death of children by disease in the U.S. There are 40,000 U.S. children actively battling cancer right now. The National Cancer Institute’s budget for childhood cancer is less than 4%. It’s such a small number, and that’s why I got involved.

With all that is happening worldwide, children are still being diagnosed with cancer. It’s imperative that we raise awareness and continue to raise funds to fund the ongoing pediatric cancer research!

You can help!

Help us make a difference by donating to Cookies for Kids’ Cancer!

Our goal is to raise at least $3000. Thank you to Mediavine for pledging to match our donations raised through this campaign up to $3000! That means when we raise $1, it turns into $4!

Thank you to so many of you who have already donated, please help us reach our goal so we can get the full matching donations and help us make an even huge difference!

Donate here today.

We have until March 15th to raise $3000! So please donate today!

Truffle Honey Goat Cheese Stuffed Rolls

Ingredients

For the Truffle Honey Goat Cheese Filling:

1 4 oz log Truffle Goat Cheese
1 4 oz log Honey Goat Cheese
4 oz cream cheese, softened
1/2 C Oaxaca cheese or Mozzarella cheese, shredded

Truffle Honey Goat Cheese Stuffed Rolls:

1 Package frozen, ready to bake dinner rolls. I used Rhodes Bake N Serve Dinner Rolls
Truffle Honey Goat Cheese Filling
4 Tablespoons melted butter (optional)
2 tsp honey (optional)
1/2 tsp Truffle Zest (optional)

Directions

  • Preheat the oven to 350°F and spray a baking sheet with nonstick spray. (You could also use a oven-safe skillet, but the cooking time may vary.)
  • In a food processor, add Truffle Goat Cheese, Honey Goat Cheese, Cream cheese, and Oaxaca or Mozzarella cheese. Pulse until combined.
  • Remove the rolls from the package and thaw per package directions. Place thawed rolls on a clean work surface. Using a rolling pin, flatten each roll to about ⅛-inch thickness.
  • Top each roll with 1-2 tablespoons of Truffle Honey Goat Cheese mixture. Fold the edges of the roll together around the mixture, pinching them tightly to seal the dough around the mixture so there are no holes or gaps. Place the roll seam side down into the prepared baking sheet. Repeat with the remaining rolls.
  • Bake for 20-22 minutes, or until the rolls are golden brown.
  • Optional: Brush with Truffle Honey Butter & serve warm.

Truffle Honey Butter
(Optional)

  • In a small bowl, mix together melted butter, honey and truffle zest or truffle salt.
  • After removing the Truffle Honey Goat Cheese Stuffed Rolls from the oven, brush the Truffle Honey Butter mixture over the top.
  • Serve any remaining truffle Honey Butter for dipping. Enjoy!
