Easy Maple Bacon Deviled Eggs

Spring picnics and summer barbeques mean it’s time for deviled eggs. My family cannot start the festive occasion unless the deviled eggs are on the table or headed to the table. Out of habit, I don’t think about making deviled eggs outside of large gatherings or in smaller than one dozen and two dozen hard-boiled eggs quantity. That’s a lot of deviled eggs!

Recently I had a deviled egg craving and did not have a picnic, BBQ, or family event on the horizon. I broke with the norm and used six hard-boiled eggs, and my life was forever changed. I don’t know if “Small Batch Deviled Eggs” are a thing, but you could go smaller. My recipe easily could be cut in half using three eggs for the yield of six deviled egg halves. That’s the perfect amount for a couple or a family where some people around the table don’t eat eggs.

Maple Bacon Deviled Eggs

Equipment

  • Medium Mixing Bowl
  • Knife
  • Spatula, Spoon or Fork
  • Optional: Food Processor

Ingredients

  • 6 Large eggs hard boiled, cooled, peeled
  • 1 tsp Florida Pure Maple Bacon Sea Salt + more to garnish
  • 1 tsp Sriracha powder
  • 2 tbsp Plain Greek yogurt
  • 2 tbsp Regular, olive oil, or light mayonnaise
  • 1-3 tsp Dijon mustard, to taste
  • 1 tsp Green olive or pepperonci pepper brine
  • Freshly ground white pepper, to taste

Instructions

  • Prepare the eggs - Slice eggs lengthwise; pop the yolks into a medium-sized prep bowl (or food processor bowl), and arrange the whites on a plate.
  • Prepare the egg yolk mixture - To the bowl, add the mayonnaise, yogurt, dijon mustard, Olive or Pepperoncini pepper brine, sriracha powder, Florida Pure Maple Bacon Sea Salt, and pepper.
  • Use the tines of a fork or a spoon (or food processor) to smash and blend the egg yolk mixture until a smooth, creamy consistency is achieved. Season with extra Florida Pure Maple Bacon Sea Salt and ground pepper to taste.
  • Finish the deviled eggs - Pipe or spoon the yolk mixture into the egg white halves. Top with a sprinkle of Florida Pure Maple Bacon Sea Salt as garnish.
